And yet this beetroot is not the only reason for the sweet taste of Zero Syrup+. In the formulation of this syrup we also used sucralose, also known as Splenda or E955. It is the only no-calorie sweetener derived from sugar. It is known to be 600 times as sweet as sucrose, twice as sweet as saccharin and four times as sweet as aspartame. It has a taste similar to sugar without any unpleasant aftertaste. Sucralose does not get metabolized in the human body for the production of energy, so it does not get broken down like sucrose. It passes through the body virtually unchanged. And this is why it can be used by almost everyone – by pregnant and breastfeeding women, children of all ages and even people with diabetes. It has been shown that it has no effect on the metabolism of carbohydrates, on blood sugar levels in the short and long term or on insulin secretion.
Furthermore, it is a thermostable molecule, meaning that it does not break down with heat, and remains unchanged in a wide pH range, which is very useful for baking desserts in the oven or for products that need to be preserved for a long period of time.
